今年的 12月22日是冬至(동지 ),韩国人也在这一天庆祝这节日。华族在这一天搓汤圆,韩国人则在这一天煮红豆羹/粥庆祝冬至。。。。
The Winter Solstice Festival or The Extreme of Winter (Chinese and Japanese: 冬至; Korean: 동지; Vietnamese:Đông chí) (Pinyin: Dōng zhì), (Rōmaji: Tōji), (Romaja:Dongji) is one of the most important festivals celebrated by the Chinese and other East Asians during the dongzhi solar term on or around December 22 when sunshine is weakest and daylight shortest; i.e., on the first day of the dongzhi solar term.
The origins of this festival can be traced back to the yin and yang philosophy of balance and harmony in the cosmos. After this celebration, there will be days with longer daylight hours and therefore an increase in positive energy flowing in. The philosophical significance of this is symbolized by the I Ching hexagram fù (復, "Returning").
Traditionally, the Dongzhi Festival is also a time for the family to get together. One activity that occurs during these get togethers (especially in the southern parts of China and in Chinese communities overseas) is the making and eating of Tangyuan (湯圓, as pronounced in Mandarin Pinyin: Tāng Yuán) or balls of glutinous rice, which symbolize reunion.
In Korea, similar balls of glutinous rice (Korean: 새알심) (English pronunciation:Saealsim), is prepared in a traditional porridge made with sweet red bean (Korean: 팥죽) (English pronunciation:Patjook). Patjook was believed to have a special power and sprayed around houses on winter solstice to repel sinister spirits. This practice was based on a traditional folk tale, in which the ghost of a man that used to hate patjook comes haunting innocent villagers on the winter solstice.(Wikipedia)

"Samgyetang" Ginseng Chicken Soup/ /人参鸡汤/삼계탕.


Dear friends, today is the Chobok (초복) in Korea, is the day that Koreans enjoy the Ginseng Chicken Soup/ Samgyetang.
Samgyetang is a hot soup for hot summer days. It is especially popular to eat this chicken soup on sambok (삼복) days, which are three distinct days of the lunar calendar — Chobok (초복), Jungbok (중복), and Malbok (말복) - which are commonly among the hottest and most sultry days in Korea.[ It is believed to eat the soup thr...eetimes in this period is good for your health.
Samgyetang (Korean pronunciation: [sʰamɡjetʰaŋ]) means ginseng (kor. insam) - chicken (kor. gye) - soup (kor. tang). It consists primarily of a whole young chicken (poussin) - filled with garlic and rice -, scallion and spices, among them jujube and Korean ginseng (source:wikipedia)
亲爱的朋友们,今天是“初伏”Chobok (초복),是韩国人家家户户都会准备享用人参鸡汤的日子。
但在韓國是在炎炎夏日食用、因為韓國人認爲只有在很熱的天氣吃、體內不好的東西隨汗水排出、讓人蔘雞這樣滋補的東西墊底、才有益身體健康。
根据农历,一年之中,有三天是最热的日子,被称为“三伏”;初伏Chobok (초복), 中伏Jungbok (중복), 末伏Malbok (말복) 。
韓式蔘雞湯(朝鮮漢字:蔘鷄湯;諺文:삼계탕)韓國的傳統名菜之一。以全隻嫩雞、腹中塞入糯米、佐以紅棗、薑、蒜和人蔘长时间炖煮製成。食用時配以蔥、鹽和胡椒。

Dear friends, how do you eat shabu shabu? Share with you this Mille-feuille Nabe, is this shabu shabu  new for you ? ^-^
mille-feuille (French pronunciation: ​[mil fœj], "a thousand leaves"),Nabemono (鍋物, なべ物, nabe "cooking pot" + mono "thing or things, object, matter") or simply called nabe, refers to a variety of Japanese hot pot dishes, also known as one pot dishes.
法文“Mille-feuille”解作「千層」,Nabe是日文,指的是“火锅”。。。
亲爱的朋友们,您是如何享用火锅 ? 与您分享这 "千层火锅“,是不是蛮新鲜的火锅料理 ?^-^

After placing all the ingredients in the pot, boil it with the broth that I prepared in advance...( I used the kelp. onion and anchovy for boiling the broth )
将所有的材料放入锅后,倒入事先准备好的上汤,煮熟它。。。(我是用海带,洋葱头和江鱼子来煮上汤)


Place the beef ( for shabu shabu) on a piece of Chinese cabbage..
将牛肉片(火锅用的牛肉),放在大白菜上。。


Place a layer of enoki mushrooms on the top of beef...
在牛肉上铺上一层金针姑。。。。


Place the perilla leaves on the top of enoki mushrooms...i
在金针姑上,再铺一层紫苏叶。。。


Place a layer of oyster mushrooms on the top of perilla leaves...
在紫苏叶上,再铺一层平姑。。


Repeat the same process till you have used all the ingredients. Cut it into three portions before you place it in the pot...
重覆以上的步骤直到用完所有的材料。 将它切成 3 部份后,然后才放入锅内。。


You can also put the oak mushrooms, crown daisy on top, pour in the broth and boil it...
您也可以放些蘑菇和茼蒿在上面, 倒入上汤,煮熟。。。。

"Cheong-guk-jang Ji Gae"/ 清国酱汤/청국장찌개


Dear friends, have you ever heard about the "Cheong-guk-jang" ? Let me tell you more about   it...

亲爱的朋友们,您可曾听说过 “清国酱”/ "Cheong-guk-jang" ? 让我来与您分享。。

Cheonggukjang (Korean pronunciation: [tɕʰʌŋɡuktɕ͈aŋ]) is a fermented soybean paste used in Korean cuisine. It contains whole as well as ground soybeans.

Cheonggukjang is generally considered to be a healthy food (particularly in the winter), as it is rich in vitamins and other nutrients, though its very strong odor is not universally enjoyed. Some people have commented that this soup gives off the aroma of wet socks. Doenjang may be used to replace it by people who dislike its smell.

Cheonggukjang is also believed to aid in digestion. For this purpose, cheonggukjang pills are produced in South Korea.

It can be made in 2 to 3 days through fermentation of boiled soybeans, adding Bacillus subtilis, which is usually contained in the air or in the rice straw at about 40 °C without adding salt, compared with the much longer fermentation period required for doenjang, another, less pungent variety of Korean soybean paste. Like many forms of doenjang, cheonggukjang is paste-like in texture, but also includes some whole, uncrushed soybeans.

Cheonggukjang may also be made by fermenting boiled soybeans in a warm place, pounding a portion of them, and adding salt and red chili powder.

Ingredients :
"cheong-guk-jang" 300 g
tofu 200 g
old fermented kimchi 250 g
mushroom           60 g
 2 pieces  of green peppers
"rice water " ( wash the rice, throw away the water after you have washed the rice for the first time, wash it again, and keep the water for boiling the broth )   5 cups ( paper cups)
anchovies 12 pieces ( in Korea, we have anchovies for boiling the broth )
minced garlic 1 Tsp
red pepper paste 15 g
red pepper powder 1/2 Tsp

Method :

1. Cut the tofu, kimch into bite size.

2. Slice the mushrooms, green pepper.

3. In a cooking pot, pour in 5 cups of " rice water" and boil it. When it starts to boil, add in the anchovies, boil it for about 8 minutes, remove the anchovies from the broth.

4. Add in kimchi, red pepper paste, red pepper powder and boil it for about 5 minutes.

5. Add in the "Cheong-guk-jang", tofu, mushroom, green pepper, minced garlic in the broth and boil it for about 6 -7 minutes or till well done.

6. Serve hot.

材料:
“cheong-guk-jang" 300 g
豆腐 200 g
泡菜 250 g
蘑菇 60 g
2 条青辣椒
“米水” (淘米后的水。去掉第一次淘米的水,再淘米的时候,留下米水,待用) 5纸 杯
江鱼子 12 只 (在韩国,有专用来煮上汤的江鱼子)
蒜蓉 1 Tsp
韩式辣椒酱 15 g
辣椒粉 1/2 Tsp

方法:
 l. 将豆腐,泡菜切成块状。

2. 将蘑菇,青辣椒切成片。

3. 在锅内倒入 5 杯的米水,煮沸后,加入江鱼子,煮约 8 分钟,取出江鱼子。

4. 加入泡菜,辣椒酱,辣椒粉, 煮 约 5 分钟。

5. 加入“cheong-guk-jang",豆腐,蘑菇,青辣椒,蒜蓉,再煮 6-7 分钟 或入味。

6. 趁热享用。

I believe that those friends who like kimchi, they sure can cook the Kimchi Jigae very well. Have you ever used the canned mackerel to cook kimchi jigae ?

我深信那些喜欢韩式泡菜的朋友们都能煮得一手好泡菜汤。 您是否可曾用秋刀鱼来煮泡菜汤呢 ?

The Pacific Saury,  which is a food source in some East Asian cuisines, is also known by the name mackerel pike.
It is known as sanma (サンマ / 秋刀魚) in Japanese, kongchi (꽁치) in Korean, qiu dao yu (秋刀魚) in Chinese, and saira (сайра) in Russian.
The flesh of Pacific saury contains good quality protein, which is easily digested, absorbed, and used by the human body. The flesh is rich in unsaturated fatty acids such as EPA and DHA, "good fats" that aid in the prevention of heart disease.
Salt-grilled saury is  served in Korea, where it is known as kongchi gui (꽁치구이).

秋刀魚学名:Cololabis saira),mackerel pike, 是鶴鱵目鶴鱵亞目秋刀魚科的其中一。其學名取自日本紀伊半島當地對此魚種的名稱,其中saira係俄語(сайра),但Saira之説法便是日本紀伊半島方言「さいら」。中文與日文的漢字都是秋刀魚,可能是源自於其體型修長如刀,同時生產季節在秋天的緣故。
秋刀鱼含有丰富的蛋白质,容易消化和吸收。。。
盐烤秋刀鱼也是韩国料理中的一道菜肴。

                        In Korea, we use the canned mackerel to cook  kimchi jigae .

                        在韩国,我们是用罐头秋刀鱼来煮泡菜汤。

I used a spoonful of Korean red pepper paste to fry the fermented kimchi...(use the old fermented kimchi to cook kimci jigae, the taste will be more better ) 

我用了一大汤匙的韩式辣椒酱来炒已发酵的泡菜 (用已发酵的泡菜来煮泡菜汤,其味道比用新鲜的泡菜来的美味)


                                Add in the water,tofu,canned mackerel to boil...

                                加入水,豆腐 和罐头秋刀鱼继续煮。。


Ingredients :
old fermented kimchi 450 g
canned mackerel 400 g ( one can,fish & broth )
Korean red pepper paste l Tsp
minced garlic 1 tsp
water 1 1/2 cup
broth from the canned mackerel
tofu 150 g
one green pepper
(P/s : At the supermarket in Korea, we have canned mackerel ,purposelly used for cooking kimchi jigae as the picture shown above;"김치찌개용"is written on the can,it means "for kimchi jigae"; if you couldn't get it, just buy the ordinary one )

Method:
1. Slice the kimchi,put into the clay pot ( generally, Korean like to use clay pot to cook this dish, if you   don't have, can use any pot).

2. Use the Korean red pepper paste to fry the kimchi with medium heat ( no
    vegetable oil is required), for about 5 minutes.

3. Pour in the water, to boil for about 10 minutes.

4. Put the tofu,,canned mackerel into the pot, pour in the broth from canned mackerel, boil it.

5. Boil it for about 15 minutes, add in green pepper, garlic,boil it for another 5 minutes.

6. Serve it with cooked rice.


材料:
已发酵的泡菜 450 g
罐头秋刀鱼 400 g ( 一罐 )
韩式辣椒酱 1 Tsp
蒜蓉 1 tsp
水  1 1/2 杯
罐头秋刀鱼内的上汤
豆腐 150 g
一条青辣椒
(P/s : 在韩国超市可以买到专用来煮泡菜的罐头秋刀鱼,如上图的罐头,罐头上写着“김치찌개용“,其意是”泡菜汤用“;若您买不到,可以采用一般的秋刀鱼罐头).


方法:
1. 将泡菜切块状,放入瓷锅内 ( 一般上,韩国人喜欢用瓷锅来煮泡菜汤;若您没有,可以采用一般的锅子)。

2. 以中火,用韩式辣椒酱来炒一炒锅内的泡菜(无需加食用油),炒约 5 分钟。

3. 倒入水,煮约 10 分钟。

4. 加入豆腐块,罐头秋刀鱼,秋刀鱼上汤。。

5. 煮约 15 分钟,加入青椒片和蒜蓉,再煮 5 分钟。

6. 配上白饭一起享用。

Red Bean Puree with glutinous rice balls is served on the winter solstice, we call it "Patjook" in Korean.

The Winter Solstice Festival or The Extreme of Winter (Chinese and Japanese: 冬至; Korean동지Vietnamese:Đông chí) (PinyinDōng zhì), (RōmajiTōji), (Romaja:Dongji) is one of the most important festivals celebrated by the Chinese and other East Asians during the dongzhi solar term on or around December 22 when sunshine is weakest and daylight shortest; i.e., on the first day of the dongzhi solar term.
The origins of this festival can be traced back to the yin and yang philosophy of balance and harmony in the cosmos. After this celebration, there will be days with longer daylight hours and therefore an increase in positive energy flowing in. The philosophical significance of this is symbolized by the I Ching hexagram  (復, "Returning").
Traditionally, the Dongzhi Festival is also a time for the family to get together. One activity that occurs during these get togethers (especially in the southern parts of China and in Chinese communities overseas) is the making and eating of Tangyuan (湯圓, as pronounced in Mandarin PinyinTāng Yuán) or balls of glutinous rice, which symbolize reunion.
 In Korea, similar balls of glutinous rice (Korean새알심) (English pronunciation:Saealsim), is prepared in a traditional porridge made with sweet red bean (Korean팥죽) (English pronunciation:Patjook). Patjook was believed to have a special power and sprayed around houses on winter solstice to repel sinister spirits. This practice was based on a traditional folk tale, in which the ghost of a man that used to hate patjook comes haunting innocent villagers on the winter solstice.

材料:
红豆  1 Cup,
水  6-7 Cup,
糯米粉 1 Tsp,
蜜糖· 2 Tsp,
盐 1/3tsp,
糖 少许

汤圆材料 (참쌀경단):
糯米粉 1/3 cup,
温水 1/4 cup,
糖 1 Tsp,
盐 少许

做法:

1.  先将红豆用水泡浸数小时,让它变软,
2.  在锅里放入红豆和水,将红豆煮熟,煮约50分钟,
3.  将红豆从锅里捞起,水则留下来待用,
4   将煮熟的红豆和 1杯的水(煮红豆时所用的水)放入搅拌器内,将红豆搅拌,
5.  将水,搅拌后的红豆,糯米粉,蜜糖,盐,糖放入锅里煮至沸,
6.  用 1/3 杯的糯米粉,加入盐,温水,糖,搓成园形状后,放在蒸笼蒸熟,或
热水中烫熟
7.  将汤圆(참쌀경단) 放入红豆羹/粥(팥죽)内

Ingredients:
red beans 1 cup
water 6-7 cups
glutinous rice powder 1 Tsp
honey 2 Tsp
salt 1/3 tsp
sugar , a little

Glutinous rice balls:
glutinous rice powder 1/3 cup
warm water 1/4 cup
sugar 1 Tsp
salt, a little

Method :
1.  Soak the beans for a few hours, till soft
2.  Bring to boil until they are very soft
3.. Drain the beans, keep the water
4.  Grind the beans with 1 cup of  water ( the water which we use to boil the bean) in a food processor
5.  Boil the ground  beans,water,glutinous rice powder,honey,salt and sugar together
6.  Put the   glutinous rice powder in a bowl, add in salt,warm water,sugar,mix it well. Form this into small balls.cook the rice balls in boiling water
7.  Put the glutinous rice balls in the red bean puree

Today, I am going to use the small shrimps from the fresh water to cook this dish...

Shrimp are widespread, and can be found near the seafloor of most coasts and estuaries, as well as in rivers and lakes. There are numerous species, and usually there is a species adapted to any particular habitat. Most shrimp species are marine, although about a quarter of the described species are found in fresh water

Small shrimps from the fresh water & the radish...

Mix all the ingredients in a cooking pot.

Ingredients :
radish 450 g
small shrimps from fresh water 300 g
Korean red pepper paste 40 g
minced garlic  1 Tsp
minced ginger 1 tsp
corn syrup 20 g
leek 1 Tsp
1 green pepper
water 130 g

Method :

1. Cut the radish into chinks or half-moon size.

2. Slice the green pepper and leek.

3. Place the radish , small shrimps , leek and green pepper in the cooking pot.

4. Mix all the ingredients for the sauce and pour into the cooking pot.

5. Bring it to boil,  on medium heat till well done.

6. When it is well cooked, the radish should be very soft and in good taste, shrimps too....

Saeujeot (Korean pronunciation: [sɛ.udʑʌt]) is a variety of jeotgal, salted and fermented food made with small shrimp in Korean cuisine. It is the most consumed jeotgal along with myeolchijeot (멸치젓, salted anchovy jeot) in South Korea. The name consists of the two Korean words, saeu (새우 shrimp) and jeot. Saeujeot is widely used throughout Korean cuisine but is mostly used as an ingredient in kimchi and dipping pastes. The shrimp used for making saeujeot are called jeotsaeu (젓새우) and are smaller and have thinner shells than ordinary shrimp.
The quality of saeujeot largely depends on the freshness of the shrimp. In warm weather, fishermen may immediately add salt for preliminary preservation

The types of saeujeot depend on the kind of shrimp used and when they are harvested.

 In spring

Putjeot (풋젓) is made with shrimp harvested from the end of January in lunar calendar through April. It is called deddeugi jeot (데뜨기젓) or dotddegi jeot (돗떼기젓) in the west coast of the South Korea. Ojeot (오젓) is made with shrimp harvested in May.

 In summer

Yukjeot (육젓, 六젓) is made with shrimp harvested in June and is regarded as the highest quality jeot. It is the saeujeot most preferred for making kimchi[2] because of its richer flavor and bigger shrimp than other saeujeot. The shrimp in Yukjoet have red heads and tails. Chajeot (차젓) is made with shrimp harvested in July.

 In fall

Gonjaeng-ijeot (곤쟁이젓) or jahajeot (자하젓, 紫蝦젓) is made with very small shrimp-like Neomysis awatschensis, one of the opossum shrimp family which is called gonjaeng-i or jaha (자하, 紫蝦) in Korean.[3] The shrimp used for it is the smallest among all saeujeot. They are harvested in August and September in small amounts where freshwater mixes with seawater of the abyss of the Yellow Sea. As it ferments, the jeot changes from transparent to light violet or brown in color and becomes soft in texture. Gonjaeng-ijeot is called gogaemijeot (고개미젓) in Jeolla Province. It is a local specialty of Seosan-gun, Chungcheong Province.
Chujeot (추젓) is made with small shrimp harvested in autumn which are smaller and cleaner than the shrimp in yukjeot.

 In winter

Dongjeot (동젓, 冬젓) is made with shrimp harvested in November. Dongbaekha (동백하젓 冬白蝦) is made with shrimp harvested in February whose bodies are white and clean.

 Other saeujeot

Tohajeot (토하젓, 土蝦젓) is made with toha (토하, 土蝦), small shrimp caught only in clean freshwater of valleys. It is a local specialty of South Jeolla Province. It is also called saengijeot (생이젓).[4]
Jajeot (자젓) is commonly called japjeot (잡젓, literally mixed jeot) which is made with several types of small shrimp without special selection. Daetdaegijeot (댓대기젓) is made with shrimp that have thick, stiff, yellowish shells. It is considered to be the lowest quality saeujeot.
Saeualjeot (새우알젓) is made with the eggs of medium-sized red shrimp harvested in April. It was presented to the royal court as a local product during the late period of the Joseon dynasty and currently is only produced in Okgu-gun, North Jeolla Province.

This basic ingredients: tofu,egg,shrimp sauce....


Beat the eggs with fork and mix with spring onion...


Boil the tofu in the kelp broth...



Add in the eggs mixture...

Ingredients :
bean curd/ tofu 200 g
2 eggs
chopped spring onion 1 Tsp
Korean shrimp sauce ( sae=u-jeot,韩式虾酱) 1 Tsp or more ( it depends how salty it is )
a pinch of salt ( it depends how salty the shrimp sauce is and your preference )
a pinch of pepper
kelp 10 x 10 cm ( for preparing the broth )
2 1/2 cups of water

Method :

1. Cut the bean curd/tofu into bite-size.

2. Beat the eggs with fork, add in the chopped spring onion, mix it well.

3. In a cooking pot, pour in 2 1/2 cups of water, add in kelp ,boil it for about 8 minutes, remove  the  kelp from the broth.

4. Add  the bean curd/tofu in  the broth, when it starts to boil again, add the eggs mixture and stir it evenly, keep on boiling...

5. Add in the shrimp sauce/"sae-u-jeot", it depends on how salty that the "sae-u-jeot" you have. If it is not salty, you may add in  some more or add in salt, it depends on your preference.

6.Sprinkle a pinch of pepper when you serve it on the table.

7. Serve hot.
