This is " Muk "Muk is a jelly made of buckwheat, mung beans, or acorns from which the starch has been extracted by grinding, steeping, and straining. The dregs from the straining are boiled down until they thicken into a gelatinous substance, which is then allowed to cool and congeal in a mold. Koreans commonly eat mukcut into small squares mixed with lettuce, cucumber, or other vegetables and garnished with a spicy sauce.

Food for ancestral rites table of my family/祭祀祭品/제사음식


On the 16th August, we went to the eldest brother house for ancestral rites. The food prepared for ancestral rites tables are not all  the same throughout the whole country, it depends on  which province the people from. My father in law was from Kyeonggi Province,but the eldest sister in law is from Busan. Their family are staying in Busan, therefore, she follows the Busan's custom rather than Kyeonggi Province, such as the shark meat..............................................................................................................
We started the ceremony at 11.30pm at night...................

16/8/2013 到釜山大哥的家去,参加已故家翁的忌日祭典。在韩国,忌日祭典的食物,因地区的差异而有所不同。已故家翁的故乡是京畿道,大嫂则来自釜山。 他们举家全住在釜山,她也就偏向釜山人的祭祖习俗,其中鲨鱼肉是釜山人祭祖必备的祭品之一。。。。。。。。。

晚上 11.30分,我们开始祭拜仪式。。。。

Notable examples of jerye include Munmyo jerye and Jongmyo jerye, which are performed periodically each year for venerated Confucian scholars and kings of ancient times, respectively.。。。。。。。。。。。。。。。。

The ceremony held on the anniversary of a family member's death is called gije (hangul: 기제; hanja: ), and is celebrated by families as a private ceremony. For such occasions, the women of the family traditionally prepare an elaborate set of dishes, including tteok, jeon, jeok, and so forth.

Dear friends , what will you prepare for your lunch box if you go for picnic ? Here are my lunch boxes...homemade fried bean curd rice,triangle ju-meok-bap,fried mini pancake,fried spicy anchovies and sausage bread...Eat the "samkak ju-meok-bap" together with the fried spicy anchovies, is very delicious .Today, I am going to share with you how to make the  " Samkak ju-meok-bap" triangle ju-meok-bap/三角寿司卷/감각주먹밥....

亲爱的朋友们,当您去郊游的时候,您会准备些什麽便当呢 ? 这是我的便当。。自制炸豆腐皮饭团,三角寿司卷,炸迷你煎饼,辣酱江鱼,还有泡菜。。。三角寿司卷配上辣酱江鱼一起吃,味道特别好哦! 今天是与大家一起分享如何制作三角寿司卷。。。


                      Place a piece of "kim" seaweed on each of the "samkak ju-meok-bap"
                      在每一三角寿司卷上放一片紫菜片


Eat the "samkak ju-meok-bap" with the fried spicy anchovies, the taste is very delicious..
三角寿司卷配上辣酱江鱼一起吃,味道特别好哦!


                                  Mix the tuna with the mayonnaise well...
                                  将罐头tuna与沙拉酱拌均。。


Put the cooked rice in a big bowl,add in vinegar,sugar,salt and sesame oil while it is still hot,mix well.Set aside.
将已煮熟的白饭放在一大碗里内,趁热的时候,加入醋,糖,盐和麻油,拌均待用。


                    Put the rice in the triangle mould,leave a space in the center...
                    将饭放入三角模型内,中间留一个空间。。。


                                                    Add in the tuna...
                                                    加入tuna。。


Add in some more rice after placing in the tuna...,press it firmly and place in another part of the mould, to become triangle shape ...
在加入tuna后,再加入一些饭。。。按紧它,再放上另一片模型,使它成为三角形状。。



Ingredients:
cooked rice 400 g
vinegar 1 1/2 Tsp
sugar 1/2 tsp
a pinch of salt
sesame oil 1/2 Tsp
one piece of "kim"/seaweed ,cut into rectangle stripe

Method :
1. Put the cooked rice in a big bowl,add in vinegar,sugar,salt and sesame oil while it is still hot,mix well.Set aside.

2. Remove the oil or water from the tuna can, put the tuna on a heated pan, heat it up. Remove from pan and mix it well with the mayonnaise.

3.  Put the rice in the triangle mould,leave a space in the center...

4. Add in the tuna...

5. Add in some more rice after placing in the tuna...,press it firmly and place in another part of the mould, to become triangle shape ...

6. Put a piece of "kim" /seaweed on each of the "samkak ju-meok-bap" .

材料:
白饭 400 g
醋 1 1/2 Tsp
糖 1/2 tsp
少许盐
麻油 1/2 Tsp
一片紫菜片,将它煎成长形条状

方法:
1. 将已煮熟的白饭放在一大碗里内,趁热的时候,加入醋,糖,盐和麻油,拌均待用。

2. 除去罐头tuna内的水分,在锅内将它弄热,离锅,在碗内将tuna和沙拉酱拌均。

3. 将饭放入三角模型内,中间留一个空间。。。

4. 加入tuna。。

5. 在加入tuna后,再加入一些饭。。。按紧它,再放上另一片模型,使它成为三角形状。。

6. 在每一三角寿司卷上放一片紫菜片。

Generally, those curry dishes  in South East Asia are spicy, coconut juice is the main ingredient for cooking curry. We can buy the Korean style's curry powder from the Korean supermarket, it has "mild","medium" and "hot" tastes. For most of the Korean, they  use potatoes,carrot,onion,mushroom as the main ingredients; they also use sausage,luncheon meat,pork,beef,chicken too. If you are the vegetarian,you can choice vegetables only......No need to add coconut juice.

东南亚式的 curry,一般上都辣,而且都少不了用椰浆来烹调。在韩国的超级市场,可以买到包装的 curry 粉; 分为 不辣 (순한맛/ mild ),稍辣和辣,三种口味。韩国人在煮这道菜的时候,主要是采用马铃薯,红萝卜,大洋葱,蘑菇;至于肉类则是香肠,午餐肉,猪肉,牛肉或鸡肉。如果您是素食主义者,则可以完全只采用蔬菜类。。。无需加入椰浆。

These are some of the Korean style curry powder available in the market.. 
这些是其中一些在市场上可买到的韩式curry 粉。。

                                   Cut all the ingredients into cube form...
                                   把所有的2材料切成方块粒状。。。

 
                                 Fry all the ingredients for about 3-4 minutes...
                                 将材料炒约 3-4 分钟。。。
  
                                Mix the curry powder and the water in a big bowl...
                                在一大碗里,将 curry 粉和水调均。。。



Boil it with   medium heat until all the ingredients turn soft. When  it is boiling, you have to stir it regularly, this is    because this curry gravy will become sticky. If you don't stir, it may stick at the bottom of the pot.

以中火烹调至材料变软,在煮的过程中要不断的搅拌,因为这 curry 酱会越煮越浓;如果不搅拌,锅底会烧焦。

               Put the rice on the dish, pour the ready cooked curry on the top of the rice before you serve.
            在一碟子内,放入白饭后,将煮好的curry配料淋在饭上食用。

 Ingredients:
Korean style's curry powder 100 g
meat ( beef,pork,chicken,sausage or luncheon meat) 150 g
onion (big one) 1
potatoes (big one) 2
carrot (big one) 1
vegetable oil 2 Tsp
water 3 1/2 cups
a pinch of pepper powder 
Method:
1. Cut all the above mentioned ingredients into small cube form,

2. Mix the curry powder and the water in a big bowl.

3. Fry all the ingredients with the vegetable oil, add in the pepper powder,fry for about 3-4 minutes, pour in the curry water, boil it with   medium heat until all the ingredients turn soft. When  it is boiling, you have to stir it regularly, this is    because this curry gravy will become sticky. If you don't stir, it may stick at the bottom of the pot.

4. Put the rice on the dish, pour the ready cooked curry on the top of the rice before you serve.


材料:
韩式 curry 粉 100 g
肉类 ( 牛肉,猪肉,鸡肉,香肠或午餐肉) 150 g
大洋葱 (大粒) 1 粒
马铃薯   (大粒)  2粒
红萝卜 ( 大条) 1条
食用油   2 Tsp
水  3 1/2杯 
少许的胡椒粉

做法:
1. 将以上所有的蔬菜和肉类,切成小方块状。

2.  在一大碗内,将curry粉加入水,调均,待用。

3.  在锅里,放入所有的材料,胡椒粉,用食用油轻轻的炒一炒,约3-4分钟后,倒入已调好的curry水,     以中火煮至所有的材料都熟后,才熄火。在煮的时候,要不断地搅拌,因为这curry汁,会     越煮越浓。若不搅拌,锅底会烧焦。
                  
4.   在一碟子内,放入白饭后,将煮好的curry配料淋在饭上食用。

    I believe that those friends who like to eat "bibimbab", they know about the "doraji",one of the main ingredient for bibimbab. These are  the flowers of "doraji" ...


    我深信那些喜欢吃韩式拌饭( Bibimbab)的朋友们,他们都懂得“doraji”/桔梗,拌饭的主要材料之一。。。这是桔梗花。。


Platycodon grandiflorus (from Greek "πλατυκώδων", meaning a broad bell) is a species of herbaceous flowering perennial plant of the family Campanulaceae, and the only member of its genus. It is native to East Asia (China, Korea, Japan and East Siberia). This species is known as platycodon. Depending upon the region, it is also referred to as the Korean bellflower, Chinese bellflower, Japanese bellflower, common balloon flower, or balloon flower (referring to the balloon-shaped flower buds).

Growing to 60 cm (24 in) tall by 30 cm (12 in) wide, it is an herbaceous perennial with dark green leaves and blue flowers in late summer. A notable feature of the plant is the flower bud which swells like a balloon before fully opening. The five petals are fused together into a bell shape at the base, like its relatives, the campanulas. There are varieties with white, pink and purple blooms in cultivation. In Korea, white flowers are more common. This plant together with its cultivars 'Apoyama group' and 'Mariesii', have gained the Royal Horticultural Society's Award of Garden Merit.

The root of this species (radix platycodi) is used extensively as an anti-inflammatory in the treatment of coughs and colds. In Korea, the plant is known as doraji (도라지) and its root, either dried or fresh, is a popular ingredient in salads and traditional cuisine. The Chinese bellflower (called 桔梗 in Chinese) is also used in traditional Chinese medicine.

桔梗学名Platycodon grandiflorus英语Balloon Flower),别名包袱花铃铛花僧帽花,为桔梗科桔梗属植物,生长在中国朝鲜半岛日本西伯利亚东部。根可入药,嫩叶可腌制成咸菜,在中国东北地区称为“狗宝”咸菜。在朝鲜半岛,中国延边地区,桔梗是很有名的泡菜食材,当地民谣《桔梗谣》所描写的就是这种植物。單憑名稱,有人會誤以為桔梗乃桔子,但實際上與桔子或柑橘屬沒有直接關係。

多年生草本,高40-90厘米。植物体内有乳汁,全株光滑无毛。根粗大肉质,圆锥形或有分叉,外皮黄褐色。茎直立,有分枝;叶多为互生,少数对生,近无柄,叶片长卵形,边缘有锯齿;花大形,单生于茎顶或数朵成疏生的总状花序花冠钟形,蓝紫色或蓝白色,裂片5。蒴果卵形,熟时顶端开裂。

中医上以根入药,性平、味苦辛,功能宣肺、祛痰、排脓,主治咳痰不爽、咽喉肿痛、肺痈等症;根含有桔梗皂苷,能增加呼吸道的分泌而发挥祛痰作用。

Mulberry, we call it " O  Di "/ 오디 in Korean.  Summer is the harvest season for mulberry  in Korea. is a good season for us to make the mulberry wine and mulberry syrup.....
桑葚,在韩文被称为 “ O Di ”/오디. 桑葚是桑树的果实,在韩国,夏季是桑葚盛产的季节,我们喜欢用它来釀酒或果汁。。。

Morus, a genus of flowering plants in the family Moraceae, comprises 10–16 species of deciduous trees commonly known as mulberries growing wild and under cultivation in many temperate world regions

The mulberry fruit is a multiple fruit, 2–3 cm (0.79–1.2 in) long. Immature fruits are white, green, or pale yellow. In most species, the fruits turn pink then red while ripening, then dark purple or black and have a sweet flavor when fully ripe. The fruits of the white-fruited cultivar are white when ripe; the fruit in this cultivar is also sweet but has a very mild flavor compared with the darker variety.
The ripe fruit is edible and is widely used in pies, tarts, wines, cordials and tea. The fruit of the black mulberry, native to southwest Asia, and the red mulberry, native to eastern North America, have the strongest flavor.It was much used in folk medicine
桑树有许多种,有乔木也有灌木,有“华桑”、“白桑”、“鸡桑”等多个品种。其果实名为桑葚
桑椹(拉丁名:Fructus Mori)是桑科桑属多年生木本植物桑树的果实,椭圆形,长1—3厘米,表面不平滑。未成熟时为绿色,逐渐成长变为白色、红色,成熟后为紫红色或紫黑色,味酸甜。《本草新编》有“紫者为第一,红者次之,青则不可用”的记载。桑椹中含有多种功能性成分,如芦丁、花青素、白黎芦醇等,具有良好的防癌、抗衰老、抗溃疡、抗病毒等作用。

功用主治

补肝,益肾,熄风,滋液。治肝肾阴亏,失眠,消渴,便秘,目暗,耳鸣,瘰疬,关节不利。
  1. 《唐本草》:单食,主消渴。
  2. 《本草拾遗》:利五脏关节,通血气,捣末,蜜和为丸。
  3. 《本草衍义》:治热渴,生精神,及小肠热。
  4. 《滇南本草》:益肾脏而固精,久服黑发明目。
  5. 《纲目》:捣汁饮,解酒中毒,酿酒服,利水气,消肿。
  6. 《玉楸药解》:治癃淋,瘰疬,秃疮。
  7. 《本草求真》:除热,养阴,止泻。
  8. 《随息居饮食谱》:滋肝肾,充血液,祛风湿,健步履,息虚风,清虚火。
  9. 《现代实用中药》:清凉止咳。
  10. 《中药形性经验鉴别法》:安胎。
  11. 《中華養生藥膳大全》:神經衰弱,失眠健忘,桑椹三十克,酸棗仁十五克,和水煎煮,每晚服

    用法与用量

    • 内服:煎汤,3~5钱;熬膏、生啖或浸酒。
    • 外用:浸水洗。
    • 宜忌

      《本草经疏》:脾胃虚寒作泄者勿服。

This Korean wine is available at the Korean supermarket, is mainly used for making fruit wine..
在韩国超市可以买到这专门用来釀水果酒的白酒。。。




Put the mulberries and Korean wine ( 30% alcohol, mainly used for making fruit wine ) in a glass container. Ferment it at least 3 months...
将桑葚和韩式烧酒(含酒精 30%,专门用来釀水果酒用的)。发酵至少 3 个月以上才饮喝。。。

Ingredients :
mulberries  5 kg
Korean wine ( contain 30% alcohol, mainly used for making fruit wine)  5 L

Method :
1. Slightly wash the mulberries,drain.

2. Put the mulberries in a glass container and pour in the Korean wine...

3. Seal the lid, ferment it for at least 3 months before you drink it....

材料 :
桑葚 5 kg
韩式釀水果专用的酒 5 L

做法:
1. 稍微洗一洗桑葚,沥干。

2. 将桑葚放入玻璃瓶内,倒入韩式釀水果专用的酒。。

3,密封玻璃瓶口,待发酵 3 个月以上后才饮喝。。
